During cold grey autumn months, I’m more than ever in need of bright colours that would cheer me up.
Since kitchen is the place where I tend to spend most of time, I first of all search for brightness in the food I create. When I think of warmth and brightness, I think of sun and tropics. After doing a bit of online research I stumbled across a few recipes that I decided to combine together to make my tropical dream dessert.

Going back to the dessert – this is dreamy and bright, super delightful. a no bake mango and coconut cheesecake with mango glaze for more indulgent experience.
This desserts consists of 3 layers: a layer of buttery biscuit crust with more sprinkled shredded coconut for extra flavour. A layer of creamy dreamy coconut cheesecake in the middle. And the final layer is a beautiful, sweet, very flavourful mango panna cotta.
