I love ending busy weeks on a sweet note. This time I baked this super cute heart shaped cake. The cake is a dark cocoa Pâte sablée, which is a tender buttery crust, whipped cream cheese frosting with milk chocolate ganache, I added cherry compote as a cake filling. Cake is decorated with hand made dark chocolate bricks, which I’ve made by tempering dark chocolate, I then covered the molded chocolate in lustre dust. I made Italian meringue rosettes and I added cherries which I covered with lustre dust.
I really love these types of cakes, they are rich and filling, but not overpowering and sugary, with a right balance of sweetness, and some bitterness from a dark chocolate. Even a small portion gives you a perfect satisfaction, this cake is just delectable.
